- 3 Fonteinen x Ognostro Druif Fiano (Season 22/23)Belgium Druif Fiano assemblage n°19: bottled in 2023, this beer comes from a maceration of Fiano marc on three-year-old lambics (300g of fruit/L). This beer is the result of a collaboration with Italian winemaker Marco Tinessa of Ognostro fame. "In April 2022, a few of our team went to the Basque Country on a culinary trip. At a lunch at the Asador Extebarri, we met up with Marco Tinessa, winemaker-owner of the magnificent Ognostro winery, Campania, Italy. After a few tasty bottles of wine and geuze, we decided to work together. For this small batch Druif, we macerated Fiano pomace for a tad over two months, before blending and bottling. We used three-year old lambikken only, rendering the weighted average age up to 36 months. The final fruit intensity is 300 grams of Fiano pomace per litre of Druif. " 6.7% ABVAsk about this

The majority of the grapes were pressed directly, whilst a small proportion were destemmed by hand and left to infuse in the fermenting juice for around a month. After pressing, the wine spent a year resting in cuve, before being transferred to a demi-muid for a further year of ageing. These were the last grapes picked during a harvest that had suffered terribly at the hands of hail. The grapes were crushed by foot and left to macerate for just a few hours in the pressoir before being moved to demi-muid for a year of rest. A pale shade of pink, the nose is delicate and nuanced, whilst the palate brings refreshing notes of green strawberries, sea salt and rose.Ask about this

A remarkably savoury wine that is a light brick colour in the glass. - Anders Frederik Steen & Anne Bruun Blauert Should We Just Rely On Luck? 2022Ardèche // France A fun and fizzy rosé made from a blend of both red and white grapes—Cinsault, Chardonnay, Grenache Blanc, Grenache Noir, Syrah and Merlot. The amounts of the different grapes are unknown as Anders forgot to write it down. This was made by a direct pressing of all the grapes with the different juices blended together during the fermentation. The wine finished fermenting with a touch of residual sugar so it was bottled with a crown cap. Insanely addictive and the perfect aperitif. - Anders Frederik Steen & Anne Bruun Blauert The Brighter Cider of Life 2021Ardèche / France Red Winter Apples and Viognier - A friend’s organic farm provides the base of Red Winter apples. Pressed directly and fermented in tank, with the fermentation finishing in bottle. The bottles were disgorged at the beginning of April, at which point it was topped up with a little Viognier from last year’s harvest at Domaine Le Mazel. The result is a delicate and vinous take on the cider genre with fine bubbles and a gentle perfume. A wonderful drink.Ask about this

This was let down with some juice of directly pressed Grenache Blanc before a short élevage in old barrels. Whilst this drinks like a light red, the white grapes bring heady perfumed notes of stone fruits and flowers, making for a vibrant wine of real intrigue.Ask about this
- Anders Frederik Steen & Anne Bruun Blauert Tout Ce Qui Est Beau Revient Gewürztraminer 2020Ardèche // France This fascinating expression of Gewürztraminer comes from a late harvest of grapes grown by the Bannwarth family in Obermorschwihr. The grapes were picked with botrytis and pressed to cuve to ferment over winter. The grapes are directly pressed the same day it was harvested to extract as much of these flavors as possible, before being moved to old barrels for three and half years of ageing without topping up. - Anders Frederik Steen & Anne Bruun I Guess This Is What I Would Have Said 2021Ardeche / France This is the end of a very long press of Viognier, along with a touch of Chardonnay, both from Domaine du Mazel in Valvignères. The two were added to the pressoir as grapes were harvested over the course of ten days, before being moved to old barriques for a year of rest. A brilliant shade of gold, this draws you in with notes of quince and spice, whilst the palate displays a great density of fruit and gentle tannins. Thrillingly unique.Ask about this

Lots of emotion in this one as the wines have seen the evolution of the Domaine since the start, and is also the very essence of the style of winemaking that they've been aiming for since day 1. Patience, ripe grapes and lots of respect for the time needed in the barrels have resulted in this beautifully balance and delicately oxidised wine. 100% Pinot Gris, filled in barrels in the Spring 2014 where it stay untouched for more than 10 years without any topping up, soutirage or anything else. - Anders Frederik Steen C'est Dans Les Yeux Qu'on Le Voit 2019Ardèche / France From Anders - A wine that are very special to us, but also special in general. In 2019 we wanted to make a white wine of Chardonnay, but the white juice didn’t please us, so we added first a white juice from a direct press of Grenache Noir, which helped. But it didn’t really give the wine what we wanted; therefore, we made a discission to add also the rosé juice and a small portion of destemmed grapes of Grenache Noir. The grapes macerated in the juice for a little more than 6 weeks. From here the wine went into to Demi-Muid until it was bottled in august 2023. No topping up, no soutirage. It has a hint of oxidation, still 35 grammes of unfermented sugars from the grapes. So, a red wine with tannins as light as a rosé and another character, then what we normally make. Richer in both structure, sweetness and flavours in general – and oxidative. Limited to 1 bottle per customerAsk about this

The majority of the grapes were pressed directly to cuve, whilst a proportion of destemmed grapes were added and left to infuse for around a month. Finally, the wine was moved to old barriques for two years of elévage. A gorgeous shade of ruby in the glass, this is a surprisingly typical expression of the variety, pairing dark fruit and a pleasant bitterness to great effect. Certainly for distilling, there are myriad varieties to achieve optimum aroma levels balanced perfectly with sugar and acidity. Capreolus looks to fruits such as these bred to grow in the pastoral landscape. One such example is the Harry Masters Jersey apple. A traditional cider apple it is classified as a bitter-sweet. This refers firstly to tannins, very full, and secondly acidity, very low. It brings with it an incomparable aroma. Grown in local orchards, hand picked, graded and cleaned, the whole fruits are fermented rather than being pressed for cider. Maturation is in a single chestnut wood barrel. On the nose, enjoy the perfume of fresh apple with hints of baked apples, sweet vanilla, tobacco and pastry. On the palate the fresh flesh of juice filled apples, sweetness balanced with long tannins and with further hints of tobacco, pastry and smoke. It is rich, powerful and complex. Mouth filling raspberries, flowers, rose geranium, turkish delight, hints of nuts, mint and spice with a beautiful sweetness. Beneath the ancient spine of the Malvern hills lies a landscape ideal for the cultivation of our beautifully aromatic raspberries. Carefully tended, each berry is hand selected and delivered to the distillery in perfect condition. Their fragility means that we have to work quickly to grade and clean each berry. Working only from the fruit’s natural sugar we slowly ferment them in small vats to ensure the preservation of their enormous vitality. Taking around 30kg fruit to produce each litre, the reward for this laborious work becomes evident in both the slow distillation and long maturation. Breathe in and a huge, intoxicating, aroma, of perfectly ripe raspberries envelops you. Extremely floral, intense high notes and softer deeper notes interplay with nuts, lemon and rose. On the palate, an explosion of flavour. Mouth filling raspberries, more flowers, rose geranium, turkish delight, hints of nuts, mint and spice with a beautiful sweetness.
