- 135 East Dry Hyogo Gin135 East Hyogo Dry Gin from The Kaikyo Distillery is named for the Akashi Meridian, which runs past the distillery in Akashi city at 135 degrees east longitude. It boasts a boatload of Japanese botanicals, with cedar wood, shiso leaf, chrysanthemum, sansho pepper and yuzu! Citrus and spice intertwine beautifully in this fragrant gin. Bottled at 42% ABV. Each botanical is sourced from local farmers or specialized vendors then distilled separately to preserve the botanicals’ characteristics. This process allows better control of the final blending process when sake spirit is added. Once distilled, the gin has a typical soft sweetness that gently entwines and harmonizes the five Japanese botanicals. Vintage 2016 was outstanding for Merlot with its long cool growing season. Made from 55% Cabernet and 45% Merlot, this is the highest percentage of Merlot we have used in this wine. Matured for 12 months in 30% new French oak. The family, which has been associated with the district since 1855, remains fully committed to a high level of ‘hands-on’ involvement. Vintage 2018 was warm and early after a frosty start. Cabernet Sauvignon was picked from Old paulownia, Dead Morris, Walker and Vortmann blocks and matured in 44% new tight grained French oak for 14 months prior to light egg fining and bottling. - Balnaves Chardonnay 2020The Balnaves Coonawarra Vineyard was established in 1975, and is situated at the southern end of the Coonawarra Terra Rossa strip. The family, which has been associated with the district since 1855, remains fully committed to a high level of ‘hands-on’ involvement. Vintage 2020 was very cool with many challenges, but great natural acidities. Chardonnay fruit was hand picked on the 10th March from both our Old block and Avery block. Whole bunch pressed juice was barrel fermented on solids in new (22%) and seasoned Louis Latour burgundy barriques, with 50% being wild ferment and 50% AWRI 1375 yeast. Lees contact for 11 months preceded bottling in March 2021, 27 barriques of Chardonnay were produced from the 2020 vintage. - Balnaves Shiraz 2019The Balnaves Coonawarra Vineyard was established in 1975 and is situated at the southern end of the Coonawarra Terra Rossa strip. The family, which has been associated with the district since 1855, remains fully committed to a high level of ‘hands-on’ involvement. The 2019 growing season brought slightly higher temperatures but these were countered by some cooler nights in March, allowing for long slow ripening. Hand-picked, the Shiraz was fermented for 8 days with 37% whole bunch, before being matured in new (35%) and seasoned French oak. Vintage 2018 was warm and early with great ripening conditions for Merlot. This year’s Blend is Merlot (56%), Cabernet Sauvignon (34%), Cabernet Franc (9%) and Petit Verdot (1%). Matureed in 12% new oak, balance seasoned French oak for 14 months prior to bottling in September 2019. - Balnaves The Tally 2016Among his many pursuits, Doug Balnaves was a shearer of Merino sheep. A shearer in Australia, is paid by the number of sheep he shears. Counted every two hour period, the Tally is recorded in the Tally book. The higher the Tally, the greater the recognition among his peers for skill and hard work. As an expression of this tradition, the Balnaves family see the wine ‘THE TALLY’ as the ultimate achievement for their company. Vintage 2016, after a warm Christmas, the weather turned with very cool nights. Picked in late March, Cabernet Sauvignon from our Dead Morris vineyard (93.5%) was fermented with Dunstan Petit Verdot (6.5%). All fruit was handpicked and received a long maceration on skins for 16 months in 58% new fine-grained chateau barriques from Taransaud, Berger and Seguin Moreau cooperages, before light egg fining and bottling in December 2017, under procork. Australia's Finest Wines ranked "Outstanding" in the Langton's Classification. - Passel Estate ChardonnayOur Chardonnay fruit was harvested in the early hours of the morning, loaded into the press cold, and gently separated from its skins. The very slightly cloudy juice was cold settled for a day and then racked. Fermentation took place in French Oak barriques, 35% of which were new. Approximately 33% of the barrels were allowed to undergo Malolactic fermentation to aid in softening acidity and to introduce an additional textural component. The wine was then left to mature in barrel on its lees for 10 months, with bâttonage occurring every 2 weeks. It received a light fining prior to filtration and bottling. - Passel Estate Lot 71 Reserve Cabernet SauvignonFruit from a single block on the estate was harvested and berries crushed (just split) and sent to a fermentor. A regime of cool fermentation on skins for 14 days with multiple, yet gentle daily pump overs was employed in order to extract every morsel of luxury tannin and flavour from each berry. When peak concentration was achieved the wine was separated from the skins directly to a special selection of the finest French Oak barriques, 58% of which were new. The wine was matured in oak for 18 months, before being lightly fined, filtered and bottled. - Passel Estate Lot 71 Reserve Syrahelected rows were hand-picked at first light. 30% of the perfect clusters were gently placed in the bottoms of our open fermenters, after which the rest of the fruit was destemmed and placed on top as whole berries. For the first 5 days of the fermentation each open fermenter underwent gentle pigéage 3 times a day, ensuring that the cap was only gently rearranged and that none of the clusters beneath were broken or disturbed, allowing each berry to undergo its own unique internal fermentation, thus adding multiple layers of complexity to the aromatic and textural foundation of the wine. Towards the end of the ferment the whole-clusters were gently broken with each pigéage to slowly release the sugar and aromatics into the wine. After a full 14 days on skin the wine was gently separated from the skins and transferred straight to oak to complete fermentation. It was then matured for 10 months in French oak puncheons, 40% of which were new, with bâttonage every 5 – 6 weeks. The juice was cold settled for 2-3 days before being racked and fermented in stainless steel and new French oak barrels (20%).
