This is a white grape variety (Grillo) with a great personality, mainly grown in western Sicily and for several decades in eastern Sicily under the historical name Riddu. It is believed to be a cross between Zibibbo and Catarratto. Maceration on the skins for 48 hours and spontaneous fermentation in concrete.
