The following day, the grapes are transferred to fermentation vessels made of concrete or wood. No grapes are crushed or de-stemmed and minimal sulphur is added at this stage. The grape must is allowed to macerate for 3-4 days before fermentation starts spontaneously. Fermentation lasts for 7-12 days at a maximum of 28°C. To extract colour, flavour and tannin from the grape skins, the must is mixed by hand 2-3 times daily according to extract and tannin development. A short post-ferment maceration is allowed to soften and focus tannins. At this stage, the wine is drained and the skins pressed using our old basket press and transferred directly to the barrel for malolactic fermentation and maturation. After completion of malolactic fermentation, the wine receives a racking to remove solids and an SO2 addition before being laid down for a 16-month maturation period. At this stage, the final blend is assembled and allowed to mature for a further 3months before bottling. It has sandy topsoil with calcareous fossilized seashells underneath. The vineyard was planted in 1972 by the Stinton Family (who has owned the property since the late 1800s). The Chenin Blanc is farmed without the use of pesticides, herbicides or synthetic fertilizers. The vineyard is in the process of getting organic certification and should be complete this year. North Canyon Vineyard, located in Santa Maria Valley, is new for Broc. They grow Muscat, which was what Broc wanted to add to the Love Sparkling this year for the aromatics. The vineyard is practising organic viticulture Ageing: Broc picked early in the morning and left the juice on the skins until the afternoon when it was pressed into stainless steel tank. They fermented the wine until dry, then added Chardonnay must to sweeten the wine and then bottled the juice. As it warmed up, fermentation occurred again in the bottle, providing the gorgeous bubbles. At 1300 feet in elevation, it is not your normal Central Valley vineyard. The soils are made up of granitic schist. Ageing: The grapes were harvested in August to help preserve their natural acidity. All varieties were fermented separately then aged in neutral French oak barrels with no sulphites. Bottled in January. Malolactic fermentation was allowed to happen naturally. In 2018 we added Picpoul to the Love White blend – adding more brightness. The Picpoul grapes come from vines that they grafted onto Roussanne vines at Love Ranch a few years ago. The cuttings came from Rorick Vineyard. This wine is unfiltered and will contain some sediment.
